Artichoke Ravioli

with Chicken, Spinach, and Cherry Tomatoes

1 – 12 oz. pkg. Giovanni Rana® Artichoke Ravioli
6 oz. grilled chicken strips
2 cups cherry tomatoes, halved
2 packed cups fresh baby spinach
4 Tbs. extra virgin olive oil
kosher salt, to taste
Parmigiano Reggiano, shaved to garnish

Sauté tomatoes with extra virgin olive oil and a generous pinch of kosher salt in a large skillet over medium heat. When tomatoes start to release their juices, about 3 - 4 mins., add chicken and sauté until heated through. Add spinach and toss to incorporate. Remove from heat.

In the meantime, prepare ravioli according to package instructions and drain, reserving ½ cup of cooking water. Add ravioli to pan and toss gently to incorporate. If necessary, add enough cooking water to the pan to achieve a sauce-like consistency.

Plate ravioli and top with shaved Parmigiano Reggiano.
