Pesto Calzone


1 - 7 oz. pkg. Giovanni Rana Pesto
1 cup cooked chicken, diced
½ cup cherry tomatoes, halved
1 cup cooked or frozen green beans
1 - 8 oz. pkg. fresh mozzarella pearls, or small balls (Ciliegine) cut in half
1 prepared ball of pizza dough, halved and formed into two balls
extra virgin olive oil
Parmigiano Reggiano

Preheat oven to 400ºF.

Mix Giovanni Rana Pesto together with chicken, tomatoes, green beans, and mozzarella. Set aside. Roll each dough ball out into a round between ⅛” and ¼”.

Spread half of the pesto mixture onto half of each round of dough, leaving at least ½” border. Fold the dough over and crimp the edges tightly. Lightly brush the top of each calzone with extra virgin olive oil and sprinkle with Parmigiano Reggiano.

Bake on a sheet pan or pizza stone in the middle of the oven until the dough is golden brown; about 13 – 18 mins. depending on oven.

Allow the calzones to rest for 3 - 4 minutes before serving.

***Alternately, keep dough flat and spread with ingredients for pizzas.
