Pesto Marinated Chicken


Giovanni Rana Basil Pesto
chicken, breasts or thighs
kosher salt

Pat chicken dry and place into a gallon size plastic bag along with enough pesto to generously cover. Seal bag and work pesto on to all surfaces of the chicken. Marinate for 2 ½ - 3 hours.

Preheat grill or grill pan. Coat with vegetable oil. Remove chicken and discard bag along with pesto. Wipe excess pesto from chicken and season lightly with kosher salt. Grill until cooked through, flipping once.

Remove chicken from grill and cover with aluminum foil. Allow to rest for 10 mins. Baste cooked chicken with additional fresh pesto and serve.
