Pesto Meatballs


1 ½ – 7 oz. pkgs. or 1 – 10 oz. pkg. Giovanni Rana Basil Pesto
2 cups bread crumbs
1 lb. ground meat (beef, veal, pork, or a combination)
1 egg
½ cup grated Parmigiano Reggiano
1 generous pinch kosher salt

Soak bread crumbs in a little milk or water and squeeze them dry. Add all meatball ingredients to a bowl and incorporate well with your hands. Form into balls about the size of a rounded tablespoon.

Brown the meatballs in 3 Tbs. extra virgin olive oil over medium heat in a large skillet, working in batches if necessary, or roast meatballs on a rimmed baking sheet, in a 400°F oven until they reach 165°F internally; about 10 – 15 mins.
