1 - 7 oz. pkg. Giovanni Rana Pesto
1 cup cherry tomatoes, halved
1 ball fresh mozzarella, torn into pieces
pizza dough, divided in two
preformed pizza shell
additional favorite pizza toppings
extra virgin olive oil for brushing
Preheat oven to 425ºF.
Roll pizza dough out into a round between ⅛” and ¼”. Spread out on a peel if using a pizza stone or on to a sheet tray.
Spread the Basil Pesto evenly on dough, leaving at least ½” border. Top pizza with mozzarella, tomatoes, and any additional toppings. Brush border with extra virgin olive oil.
Bake on a sheet pan or pizza stone in the middle of the oven at 425ºF until the dough is golden brown; about 8 – 12 mins.
Allow the pizza to rest for 3 - 4 minutes before serving.
