Pesto Panini Sliders


1 - 7 oz. pkg. Giovanni Rana Basil Pesto
6 Ciabatta rolls, toasted
1 1/2 lb. of your favorite mixed Italian deli meats, such as Prosciutto, Capicola, Sopressata, etc.
6 slices Italian cheese, such as provolone
6 slices tomato
kosher salt & freshly ground black pepper, to taste
extra virgin olive oil & balsamic vinegar, to taste

Spread 1 Tbs. of Giovanni Rana Pesto on each of the bottom halves of the Ciabatta rolls. Pile rolls with arugula, deli meats, cheese, and tomato slice. Season the tomatoes with kosher salt and freshly ground black pepper. Drizzle with extra virgin olive oil and balsamic vinegar.

In the meantime, heat a nonstick sauté pan, grill pan, or something similar. Place sandwiches in pan and cover with another heavy pan. Press the sandwiches such that the bread is flattened. If the top pan is not heavy enough, add weight to the pan, such as cans or other cookware. When bottom bun is well toasted, flip the sandwiches and repeat; about 3 minutes per side.
