Cheese “Delicato” Ravioli in Alfredo
with Pears & Thyme
1 - 22 oz. pkg. Giovanni Rana Cheese “Delicato” Ravioli
1 - 10 oz. pkg. Giovanni Rana Alfredo
2 pears, peeled and cored, sliced thin
2 whole sprigs thyme
3 Tbs. butter
Pecorino Romano to taste
freshly ground black pepper
Sauté pears with the thyme in butter over med/high heat until tender and starting to brown; about 6 – 8 mins. Remove the thyme, add the Alfredo and heat through.
In the meantime, prepare Giovanni Rana Cheese “Delicato” Ravioli according to package instructions and drain, reserving ½ cup of cooking water. Add ravioli to pan and toss gently to incorporate. If necessary, add enough cooking water to the pan to achieve a sauce-like consistency.
Plate the ravioli and top with Pecorino Romano and a turn of freshly ground black pepper.
