Cheese “Delicato” Ravioli all’Amatriciana


1 – 22 oz. pkg. Giovanni Rana Cheese “Delicato” Ravioli
1 – 15 oz. pkg. Giovanni Rana Marinara
6 oz. bacon or pancetta, chopped
1 Tbs. extra virgin olive oil
1 generous pinch crushed red pepper
½ cup  Pecorino Romano or Parmigiano Reggiano, grated

Sauté chopped bacon or pancetta with extra virgin olive oil over medium/low heat until fat is rendered.   Pour off most of the fat and add crushed red pepper and marinara.  Bring to a simmer for 5 mins.

In the meantime, prepare Giovanni Rana Cheese “Delicato” Ravioli according to package instructions, reserving 2/3 cup of cooking water.  Add ravioli and cheese to pan and toss gently to coat.  If necessary, add enough cooking water to the pan to return to a loose consistency. 

Plate and finish with more Pecorino, if desired.
