Cheese “Delicato” Ravioli

with Balsamic Reduction and Chives

1 - 22 oz. pkg. Giovanni Rana® Cheese “Delicato” Ravioli
2 Tbs. sugar
1 Tbs. water
¼ cup Balsamic vinegar
4 Tbs. unsalted butter, melted
1 Tbs. fresh chives, finely chopped
¼ cup Parmigiano Reggiano, grated
kosher salt

Combine Balsamic vinegar, sugar, water, and a pinch of kosher salt in a small saucepan and place over medium heat. Reduce by half; about 4 minutes. Set aside. In a separate sauté pan, melt butter over med/low heat and add chives.

In the meantime, prepare ravioli according to package instructions and drain, reserving 2/3 cup of cooking water. Add ravioli and the chives to the butter and gently toss. If necessary, add enough cooking water to the pan to achieve a sauce-like consistency. Add Parmigiano Reggiano and toss. Season to taste with kosher salt.

Plate ravioli and top with a drizzle of the Balsamic reduction and more Parmigiano Reggiano, if desired.
