Cheese “Forte” Ravioli

with Roasted Beets & Fresh Mozzarella

1 – 12 oz. pkg. Giovanni Rana® Cheese “Forte” Ravioli
1 medium red beet, washed
1 medium golden beet, washed
6 whole sprigs thyme
2 Tbs. vegetable broth, divided
3 Tbs. unsalted butter
1 ball fresh mozzarella, torn into 1/2” pieces
kosher salt
1/3 cup fresh arugula
drizzle extra virgin olive oil

Preheat oven to 400°F.

Wrap beets separately in aluminum foil, each with two whole sprigs of fresh thyme and a tablespoon of vegetable broth. Roast until beets are tender when pierced with a knife; about 35-45 mins. When beets are done, remove from foil and allow to cool. Keeping red and golden separate, peel beets by rubbing with a kitchen towel and cut into ½” dice. Season with kosher salt.

Melt butter in sauté pan over medium heat. Reduce heat to low and add golden beets. Toss until beets are heated through.

In the meantime, prepare ravioli according to package instructions and drain, retaining ½ cup cooking water. Add ravioli to pan with golden beets and gently toss. If necessary, add enough cooking water to the pan to achieve a sauce-like consistency. Add arugula and toss.

Plate ravioli and top with red beets and mozzarella. Season mozzarella with a little kosher salt and finish with a drizzle of extra virgin olive oil.
