Cheese “Forte” Ravioli Puttanesca
1 – 12 oz. pkg. Giovanni Rana Cheese “Forte” Ravioli
1 – 15 oz. pkg. Giovanni Rana Marinara
2 Tbs. extra virgin olive oil
4 anchovy filets, rinsed (optional)
1 cup Italian black olives, roughly chopped
3 Tbs. capers, rinsed
Pinch crushed red pepper
Heat olive oil in pan over medium heat. Add anchovies (if using), olives, and capers and sauté until anchovies disintegrate or about 3 – 4 mins. Add marinara to the pan and bring to a simmer.
In the meantime, prepare ravioli according to package instructions and drain, reserving ½ cup cooking water. Gently toss ravioli with the puttanesca sauce. If necessary, add enough cooking water to the pan to achieve a sauce-like consistency.
Plate and finish with a drizzle of extra virgin olive oil.
