Cheese “Forte” Ravioli

with Roasted Grapes & Shallots

1 – 12 oz. pkg. Giovanni Rana® Cheese “Forte” Ravioli
4 medium shallots, peeled, trimmed, quartered, layers separated
1 ½ cups grapes
3 whole sprigs fresh thyme
extra virgin olive oil
kosher salt to taste
2 Tbs. unsalted butter
¾ cup baby arugula or baby spinach
¼ cup Parmigiano Reggiano + more for garnish

Preheat oven to 425°F.

Place shallots in a bowl with grapes and thyme and season with kosher salt. Drizzle with enough extra virgin olive oil just to coat. Empty bowl on to a sheet pan and roast until shallots are soft and beginning to brown and grapes are almost bursting; about 15-20 mins. Remove thyme.

In the meantime, prepare ravioli according to package instructions. Heat butter in a sauté pan and lightly sauté arugula or spinach until just starting to wilt. Add grapes and shallots to the pan and warm through. When ravioli are done, add to pan and gently toss. Add Parmigiano Reggiano and gently toss again.

Plate and finish with more Parmigiano Reggiano, if desired.
