Cheese “Delicato” Tortelloni

with Bacon and Peas

1 – 12 oz. pkg. Giovanni Rana® Cheese “Delicato” Tortelloni
4 oz. thick cut bacon, chopped
1 Tbs. extra virgin olive oil
1 Tbs. unsalted butter
¼ cup green beans, cut into ¼” pieces
¼ cup fresh or frozen peas
½ – 15.5 oz. can cannellini beans, drained
Parmigiano Reggiano, shaved

Render chopped bacon with extra virgin olive oil over medium/low heat. When bacon is crisp, remove to a paper towel with a slotted spoon. Drain all but 1 Tbs. fat from the pan and add butter to melt along with cannellini beans.

In the meantime, prepare Giovanni Rana Cheese “Delicato” Tortelloni according to package instructions along with the green beans and peas, in the same water. When tortelloni are done, drain tortelloni and vegetables, reserving ½ cup of cooking water.

Add tortelloni and vegetables to pan and toss gently to incorporate. If necessary, add enough cooking water to the pan to achieve a sauce-like consistency. Top with cooked bacon and shaved Parmigiano Reggiano.
