Cheese “Delicato” Tortelloni

with Bacon and Peas

1 – 12 oz. pkg. Giovanni Rana Cheese “Delicato” Tortelloni
1 – 15 oz. pkg. Giovanni Rana Marinara
8 to 10 oz. cooked shrimp
drizzle quality extra virgin olive oil
2 Tbs. fresh scallions, sliced

Heat marinara and shrimp together in a sauté pan over medium heat until both are warmed through.

In the meantime, prepare tortelloni according to package instructions and drain, retaining ½ cup cooking water.  Toss ravioli with marinara to incorporate.  If necessary, add enough cooking water to retain a sauce-like consistency and toss again. 

Plate ravioli and finish with a drizzle of extra virgin olive oil and fresh scallions.
