Chicken Mozzarella Tortelloni in Pumpkin Soup

with Balsamic Cranberries
Ingredients:

1 – 12 oz. pkg. Giovanni Rana Chicken Mozzarella Tortelloni
1 qt. container favorite pumpkin or butternut squash soup
1/3 cup dried cranberries
3 tbs. quality balsamic vinegar
Greek yogurt, to finish

Toss cranberries in balsamic vinegar and set aside to plump.  Stir occasionally.  Do this step ahead to allow cranberries to absorb more Balsamic.

Bring your favorite pumpkin or butternut squash soup to a boil.  If necessary, adjust seasoning or consistency with some water.  Add Giovanni Rana Cheese “Delicato” Tortellini to broth and gently boil until tender but still al dente; about 3 – 4 mins. 

Spoon tortellini and soup into bowls.  Top with balsamic cranberries and a dollop of yogurt.
