Chicken Rosemary Ravioli
with Red Wine Mushrooms & Parsley
1 – 12 oz. pkg. Giovanni Rana® Chicken Rosemary Ravioli
1 Tbs. + 2 Tbs. unsalted butter
2 cloves fresh garlic, minced
8 oz. sliced button mushrooms
¼ cup dry red wine
2 Tbs. fresh parsley, chopped
Sauté garlic in a large sauté pan with 1 Tbs. butter over medium/low heat until light golden brown; about 2 mins. Add sliced mushrooms to the pan with a pinch of kosher salt and increase heat to medium. Sauté until mushrooms are tender and have released their liquid; about 5 - 6 mins. Add red wine and increase heat to med/high. Reduce to a glaze and add 2 Tbs. butter. Reduce heat to low to melt.
Prepare ravioli according to package instructions and drain, reserving ½ cup of cooking water. Add ravioli and parsley to pan and toss gently to incorporate. If necessary, add enough cooking water to the pan to achieve a sauce-like consistency.
Plate and serve.
