Italian Sausage Ravioli

with Sautéed Bell Peppers and Onions
Ingredients:

1 – 12 oz. pkg Giovanni Rana® Italian Sausage Ravioli
2 bell peppers, various colors, cored and sliced
1/2 yellow onion, sliced
3 Tbs. extra virgin olive oil
kosher salt
2 Tbs. butter
¼ cup Parmigiano Reggiano, grated + more to finish
fresh parsley for garnish

Sauté peppers and onion in extra virgin olive oil with a generous pinch of kosher salt over medium heat until tender; about 7 -9 mins. Add butter to melt.

In the meantime, prepare ravioli according to package instructions and drain, reserving 1/2 cup of cooking water. Add ravioli to pan and toss gently to incorporate, insuring that butter is completely melted and incorporated.

Add Parmigiano Reggiano and parsley and toss. If necessary, add enough cooking water to the pan to achieve a sauce-like consistency.

Plate and finish with more Parmigiano Reggiano, if desired.
