Cheese Delicato Tortellini

Summer Salad

1-22 oz. pkg. Giovanni Rana Cheese “Delicato”Tortellini
1 ½ cup snap peas, halved
¾ cup favorite vinaigrette, such as Balsamic or lemon
kosher salt
½ cup store-bought shredded carrots
¼ cup store-bought diced red onion
1 cup soft shredded cheese, such as mozzarella or asiago

Prepare tortellini according to package instructions.  Add  snap peas to the water at the same time as the tortellini.  Drain tortellini and peas completely, making sure to remove as much water as possible.  A salad spinner can be used for this. 

Gently toss together tortellini, vegetables, dressing, and cheese.  Adjust seasoning if necessary.

Plate and finish with more cheese, if desired.
